My in-laws are coming into town this weekend, so in between planning our community/church egg hunt and getting the house ready, I have been thinking forward to Easter dinner. I think I have the menu down. I don’t really want ham or turkey and I want something economical, simple, but yummy. So, we’re going with:
Herb Rubbed Pork Tenderloin
Brussel sprouts (or green beans) with carmelized onions
Herb and garlic red potatoes
